Raised in the small farm town of Waitsburg, Washington, Certified Executive Chef Solon Pietila comes from a multi-generational Coug family whose roots in the area date back to the 1800s. A proud graduate of the Western Culinary Institute ('03), he has over 20 years of experience in higher education food service, having worked in or supported schools in more than 20 states. His career in higher education began at the University of Idaho.
Chef Solon is passionate about student engagement, multicultural center involvement, enhancing the campus experience, and promoting sustainability and the local foodshed. He is dedicated to creating a vibrant and inclusive dining environment for all students.
Outside of his professional life, Chef Solon co-owns Cocobee Luxury Skincare and Candles in Colfax with his wife, Kylie. They have two daughters, Georgia and Mara. Chef Solon's favorite cuisine is authentic Mexican, with tacos being his top choice, while horseradish is his least favorite food.
In his free time, he enjoys spending time with his family, golfing, fishing, and, of course, cooking.
