Less Meat Mondays

As part of our continuing commitment to sustainability and wellbeing for diners, Dining Services hosts Less Meat Mondays at each of the Dining Centers.

Focusing on eating more plants, while reducing our intake of meat, is beneficial to our health, our wallets, and the environment.

By consuming less meat, you:

  • Reduce the risk of cardiovascular disease and Type II diabetes
  • Can help control high blood pressure and hypertension
  • Can lower your cholesterol by eating more fiber

By consuming less meat, we can:

  • Reduce greenhouse gas emissions
  • Conserve water
  • Preserve native plant and animal habitats

Consuming less meat is also better for our wallets, as plant-based proteins are often less expensive than animal-based proteins.

At Hillside Cafe:

  • Chef's Creation will offer a vegetarian and a vegan entree for lunch and dinner
  • All pizzas and soups will be vegetarian
  • Natural will feature a Tex Mex bar with quinoa taco filling
  • Blended mushroom and beef burger available at Big Cat Grille

At Northside Cafe:

  • All soups and specialty salads will be vegetarian
  • Blended mushroom and beef burger available at Big Cat Grille

At Southside Cafe:

  • All soups, pizzas, specialty salads, and wraps will be vegetarian
  • Blended mushroom and beef burger available at Big Cat Grille
